Mappillai Samba takes longer to cook than white rice — its red bran is intact and requires full hydration. Do not rush this step. The sesame oil and palm jaggery combination is traditional and optimal: the iron from the jaggery, the calcium from sesame, and the Vitamin E from sesame oil work together.
